Christmas Guacamole

  • Rough smash 4 large slightly firm avocados in large bowl glass or ceramic bowl (don’t use metal, which reacts to citrus)
  • Chop ½ large white or yellow, place in bowl with sprinkle of vinegar and salt and rest for 5-10 minutes to temper sharpness
  • Half, seed and chop 1-2 jalapenos depending on desired heat
  • Chop, ½ to ¾ pear and same amount of peeled firm apple
  • Quarter 1 cup green seedless grapes
  • Remove seeds from 1 pomegranate removing all white pulp, set ¼ aside to top finished guac
  • Lightly toss fruits into avocado mixture (don’t over mix, nice clean chunks of avocado with fruit
  • Squeeze ½ lime into mixture
  • Salt and pepper to taste
  • Plate guacamole in serving bowl, top with reserved pomegranate and shaved Cotija Mexican cheese (or Feta if Cotija is not available)
  • Serve with homemade fried corn and flour tortilla chips (or if you must use a fresh bag of Tostito tortilla chips or other quality chips)
  • Serve with salt or Tajine rimmed margarita’s, or nice Reposado Tequila on ice with squeeze of lime and splash of sparkling water (please avoid crappy vanilla forward tequila, go with no additive pure agave tequila)
